smoked salmon & leek puff pastry pizza tart
My smoked salmon & leek puff pastry pizza tart is a quick & easy lunch or supper recipe. Only a few minutes preparation time then into the oven. Serve with a simple salad for a tasty meal ready in less than 30 minutes.

I love the combination of the smoky salmon with the sweet caramelised leeks & cream base. You can of course take the basic idea and add your own toppings & ingredients. I have made puff pastry pizza tarts (I do like saying that!) so many times with different toppings. Great for a tasty & quick meal with friends. What about trying it with chorizo & chilli, blue cheese & mushroom or ham & tomato instead? Just a few ideas - but it's up to you...

Preparation time: 10 minutes
Cooking time: 20 minutes

Ingredients:
1 ready rolled puff pastry sheet
3 tbsp double cream/creme fraîche
1 leek (washed & finely sliced)
100g smoked salmon
1 lemon (zest & juice) 
3 tbsp olive oil
1 tbsp chopped dill
black pepper or cayenne chilli powder & salt to season 

Method:
Preheat the oven to 200c
Unroll the pastry sheet & place on a greaseproof paper lined/non stick baking tray 
Heat a frying pan with 2 tbsp olive oil & fry the finely sliced leek until softened - about 5 minutes. Season with a bit of salt  & pepper
Add the cream base to the pastry sheet leaving about an inch or so around the edges, followed by the chopped dill 
Add the cooked leeks, followed by the smoked salmon & finish with a bit of black pepper, lemon zest & olive oil drizzled over the top. 
Bake for about 20 minutes until the pastry is puffed up and cooked through
Serve with some lemon wedges to squeeze over if liked.
